Costolette Di Maiale Con Funghi
[Braised Pork Chops with Mushrooms]
Serves 6 Preparation time: 45 minutes

3 lbs pork chops, loin thin cut
1/2 cup flour
3 tbsp oil
Salt and pepper
3/4 cup chicken stock
3/4 cup tomatoes chopped, seeded
3/4 cup heavy cream
1/2 lb fresh mushrooms, sliced

1. Trim fat off pork chops.
2. Pass pork chops in flour.
3. Heat oil in skillet.
4. Brown each side of the pork chops. Cook evenly on
both sides until done (about 10 min).
5. In the same pan, add the chicken stock and cook 3 min.
6. Add the chopped tomatoes, cream and mushrooms. Cook for about 10 min.
7. Add the pork chops and heat well. Season with salt and pepper.
