Torta Di Zucchini  [Zucchini Rice Torta]
Serves 6      Preparation time: 1-1/2 hour

  1/2 cup cooked rice (3 oz. uncooked)
1 lb grated zucchini (unpeeled)
1 cup grated cheddar cheese
1/4 cup chopped green onions, including tops
1 tbsp minced parsley
2 tsp butter (to grease pan)
2 well-beaten eggs
1/4 tsp garlic salt
Salt
White pepper
Paprika
  1. Combine all ingredients (except paprika).
2. Adjust seasoning to taste.
3. Place mixture in a 8-1/2 x 6-1/2 inch buttered pan.
4. Sprinkle paprika on top.
5. Bake at 350 degrees for 45 minutes. Check for doneness with toothpick or knife.
